Potatoes wouldn't be a bad idea as something that's easy to store long-term. Carrots and turnips too. Lettuce grows quickly and a decent source of greenery. Tomatoes, always a good crop.

Corn strikes me as something good long term, but I don't know how easy it would be to grow.
