They didn't have crayfish, so he worked with what he has. It's served over rice, but if you went in with certain expectations it might be weird. It's far from bad but there's too much onion relative to what "ought" to be in gumbo, the okra pieces are too big, and some of the spices more closely resemble something you'd expect in Latin America than Creole. Still, as stated, the flavor comes together well. Just... it's off the mark he's looking for.
